SUYO Modern Peruvian Hosts Sunday ‘Pollada’ Lunch To Celebrate Peruvian Independence Day
Rare daytime dining event features Chef Ricardo Valverde’s contemporary take on Peruvian tradition
SUYO Modern Peruvian is thrilled to announce a one-of-a-kind Sunday afternoon “Pollada” lunch service on July 28, 2024, in celebration of Peruvian Independence Day, also known as “Fiestas Patrias Peruanas.” This exclusive event commemorates Peru’s independence from the Spanish Empire, offering a unique daytime opportunity to enjoy SUYO’s exceptional cuisine.
The “Pollada,” inspired by the beloved traditional Peruvian chicken dish, is synonymous with community, family gatherings, and cultural fundraisers in Peru and, in this spirit, SUYO aims to bring this rich tradition to Vancouver, uniting guests in a festive celebration of Peruvian heritage and culinary excellence.
SUYO Chef/Owner Ricardo Valverde will present his contemporary, upscale interpretation of Pollada, reflecting the elevated modern Peruvian cuisine that has earned SUYO numerous accolades since its opening in 2022, such as two consecutive GOLD awards for “Best Latin American” by Vancouver magazine as well as a coveted spot on the Recommended list by MICHELIN Guide Vancouver.
“Our inaugural ‘Pollada’ at SUYO is a heartfelt opportunity for me to share and celebrate my heritage with Vancouver in a new and exciting way,” shared Valverde. “Sitting down together to enjoy renditions of these traditional foods will allow our guests to connect as a community and gain a deeper appreciation of Peruvian culture.”
Guests can indulge in this festive occasion for $79 per person, plus tax and gratuity. The Pollada lunch menu, served family-style in three 90-minute seatings at 11 a.m., 12:30 p.m., and 2 p.m., features:The menu features:
- Halibut Ceviche: red onion, aji limo, choclo, cancha, leche de tigre
- Windberry Farms Grilled Chicken: cabbage, lettuce and tomato salad, trio of aji sauces, yuca fries
- Lucuma Popsicles: A cold and refreshing sweet treat made with lucuma, a native Peruvian fruit
Additionally, guests can enjoy traditional Peruvian beverages such as chilcanos, chicha morada, and a trio of pisco sours (maracuya, chicha morada, and classic) crafted by SUYO’s acclaimed bar team, led by Max Curzon-Price, the reigning Vancouver Magazine Bartender of the Year and recipient of the MICHELIN Guide ‘Exceptional Cocktails’ award.
