Okanagan Valley’s Newest Winery Taps Michelin-Star Pedigreed Chefs to Develop Culinary Experiences for the 2020 Season

Phantom Creek Estates, a new destination winery nestled in British Columbia’s scenic Okanagan Valley, is delighted to announce the hiring of Canadian-born chefs Sarah Fiore and Alexandra Sandoval, hailing from Michelin-starred Estela in New York City, to develop the winery’s culinary program for the 2020 season.  With their arrival, the Estate is launching the Founder’s Cellar Experience – the most distinguished wine country offering in the Okanagan Valley.

Chefs Sarah and Alexandra have developed a series of menus designed to showcase Phantom Creek wines, pairing each one with local fare and delicious house-made, seasonal offerings.

The Founder’s Cellar Experience is the premier food and wine experience.  It begins with a captivating tour of the Estate, immersing guests into the terroir, history, sustainable farming practices and winemaking philosophy of Phantom Creek Estates.  Guests will then be escorted to the Founder’s Cellar, the winery’s most special and exclusive underground space featuring a magnificent, hand-blown Chihuly glass sculpture that is surrounded by several vintages of the winery’s most exclusive wines.  Here, guests will enjoy a curated five-course menu, prepared and presented by the chefs, and tastefully paired with exclusive and Library wines.  This experience truly embraces and celebrates the surrounding landscape of the Southern Okanagan.

The Cheese and Charcuterie Board can be added to the Seated Tasting and features Bresaola, Pancetta, Duck Rillette, Chabichou, Aged Gouda, and Tiger Blue.  To balance the richness of the meat and cheese, the board features a variety of seasonal pickles and preserves.

The Five-Course Pairing can also be added to the Seated Tasting and features a West Coast Oyster with green apple and dill, Pickled Patty Pan Squash with butter and chili salt, Cured British Columbia Rainbow Trout with almond cream, Saskatoon berry and carta di musica, House-made Duck Terrine served with a toasted baguette, and Brioche with Tiger Blue Cheese and preserved cherry.
