Appleton Estate 8 Year Old Reserve, Oat Milk, Maple Syrup, Angostura Bitters, Soda Water

Canadian winters always make me crave warm spices and teas, but I also love the tropical drinks you get on vacation. This drink is the best of both worlds! It takes inspiration from the ultra Canadian flavour of maple syrup paired beautifully alongside Appleton Estate 8 Year Old Reserve, plenty of Angostura Bitters for those spiced, tropical tones and a bit of soda water and oat milk for that je ne sais quoi “am I on a beach or in the middle of a snow storm” feel! Perfect for a fun night warming up beside a fire or for a taste of home in a cabana by the sea.

1.5oz (45ml) Appleton Estate 8 Year Old Reserve
1.5oz (45ml) Oat Milk
0.5oz (15ml) Maple Syrup
3 heavy dashes Angostura Bitters
Soda Water

Add the first 4 ingredients in a shaker tin. Fill with ice and shake for 15 seconds until chilled. Strain into a Collins glass over fresh ice. Top with soda water. Optional garnish: Star Anise pod and freshly grated nutmeg.

This riff on a Paper Plane highlights the cargo crate of flavours found in Appleton Estates 8 Year Reserve. I was really taken with the molasses notes in the Appleton 8 Year and thought those notes would be highlighted with Root Beer. Reducing that down to a syrup (and adding coffee bean for some complexity and added bitterness) gave me more control and made space for other flavours. I’ve been experimenting with Paper Plane variations (mostly because I can’t find Amaro in Yellowknife) and while this shares very little in common with the original recipe, I think that the flavours play well and root it both in the rum’s Caribbean origin and the far North, with a nod to the bush pilots and the planes that transport us there.

2oz (60ml) Appleton Estate 8 Year Old Reserve
0.5 oz (15ml) Aperol
1oz (30ml) Root Beer & Coffee Bean Syrup*
2 dashes Orange Bitters
4 dashes Angostura bitters (for garnish)
1 orange wheel (for garnish)

In a mixing glass, combine the Rum, Aperol, Root Beer Syrup and Orange Bitters with ice. Stir thoroughly for 30+ seconds. Set aside. Place the orange wheel in a chilled coupe glass and soak with 4 dashes of Angostura Bitters. Strain the cocktail gently into glass over the orange wheel.

*Root Beer & Coffee Bean Syrup: Add one 500ml bottle of root beer and 10-12 coffee beans (intact or cracked but not ground) to a saucepan. Boil until reduced by two-thirds. One 500ml bottle will produce approx 175 ml of syrup. Store any leftover syrup in the fridge.

Appleton Estate 8 Year Old Reserve, Dry Vermouth, Maraschino Liqueur, Orange Liqueur, Chocolate Bitters, Absinthe rinse, Grapefruit peel

Appleton is an incredibly versatile spirit and I wanted to showcase its usability in a classic style of cocktail.

60ml Appleton Estate 8 Year Old Reserve
15ml Cynar
7.5ml Dry Vermouth
1 bar spoon Maraschino Liqueur
1 bar spoon Orange Liqueur
2 dashes Chocolate Bitters
Absinthe rinse

Add a few drops of Absinthe to a cocktail coupe. Rinse and dump. Set glass aside. Add all other ingredients to a mixing glass. Fill with ice and stir until chilled. Strain into prepared glass. Garnish with grapefruit peel.
