An introduction to the Vasanti Estate Winery Cabernet Sauvignon Rosé

I enjoyed the Vasanti Cabernet Sauvignon Rosé this week, taking in the warm, sunny, last days of summer and the cool nights of fall. The Rosé is the perfect patio sipper but it is not limited to the days of summer, not by any means.

It’s important not to pigeonhole a wine varietal, especially one as exquisite as this single varietal Rosé. This wine is worthy of enjoying on its own in any season, or as I have done here, pairing it with a very seasonal dish. This time with a classic, and one of my Fall favourites, Roasted Butternut Squash Soup and using the last of the tomatoes in my garden, a tomato, basil and fresh mozzarella salad. Both were perfect pairings with the Vasanti Cabernet Sauvignon Rosé.

Our Cabernet Sauvignon rosé comes from our West Bench block in Osoyoos, B.C. The Eastern-facing slope and even distribution of sunlight produce a wine with exceptional elegance, refreshing acidity, and a captivating expression of fruit.

Tasting notes:

Nose: Strawberry and watermelon, with hints of lemon zest and fresh herbs
Palate: Dry, refreshing with a captivating expression of fruits (Strawberry, Watermelon, Grape fruit, and Orange zest)

Serving Recommendations:

Serving Temperature: 10-13C / 49-55F
Serving Glass: White Wine Glass (Flared Lip Preferred)
Cellar Recommendation: 0 to 3 years

Vineyard Notes

100% of the grapes used to produce this wine are from the West Bench block at Monarch Vineyards in Osoyoos, B.C.

Growing Characteristics:
Even distribution of heat from sunrise to sunset
Mild Eastern-facing slope that arcs towards the lake and mitigates some of the burning heat typical to the region
Sandy soils with traces of granite deposits offer great drainage to help develop a strong root system for the vines

Production Notes

All of these grapes were harvested at 23.5 Brix
Direct Pressing method was used to produce this wine
Pressed then settled for 3 days
Fermented at 18 degrees Celsius in stainless steel tanks
Aged in stainless steel tanks

This rosé is a delight.

Delicately floral, followed by strawberry and geraniums with ever so slight hints of brioche. As it sits some subtle citrus notes, mandarin orange, with green apple scents. All pleasing. An interesting rust colour in the glass. Clear and shimmery.

Delightfully dry and crisp with a perfect level of acidity. Initially a wow of Jolly Rancher (green apple, cherry, watermelon, grape and blue raspberry) without the sweetness. The palate follows the nose with yummy wild strawberry and tantalizing orange citrus.

The wine was ideal with the tomato and fresh mozzarella salad with the acidity in the wine complimenting and not over powering the Heirloom tomato and sharp olive oil and basil.

As much as I enjoyed the pairing of the Heirloom and fresh Mozzarella salad the true test was the Roasted Butternut Squash soup. Each batch of soup I make differs from the last. This one the stock was just made the same day and the squash roasted with a good quality olive oil to bring out the flavours.The flavour was quite intense so it was a challenge for the Rosé that was not only met but exceeded expectations.

Most important to remember is Rosé works in any season. This Rosé is a single varietal and is delightful on its own or paired with dishes featuring tomatoes, roasted vegetables, spice, miso as well as dishes with garlic and ginger, a very versatile wine. Ideal with cheese and charcuterie.
